Jeffrey Robinson

St Ives Cookery School

Jeffrey Robinson is an award winning chef and founder of St Ives Cookery School, known for his ingredient led, whole food approach to cooking, with a focus on seasonality, nutrition, and bold, honest flavour.

He was one of the first chefs in the world to be awarded a Green Michelin Star, recognising his commitment to sustainability and responsible sourcing as well as 3 rosettes as well as other accolades for sustainability, creativity and innovation.

As a young boy growing up in St Ives, he is proudly representing the town on Great British Menu, bringing his coastal influence and personal cooking ethos again to a national stage.

Nicholas Balfe

Holm

Nicholas Balfe is the Chef Director and Owner of Holm, a restaurant with rooms in South Petherton, Somerset, which celebrates its fifth year in 2026. Self-taught, Nicholas began his career after leaving a corporate marketing role in London, realising that food, not office life, was where his real passion lay.

He trained in some of London’s most influential kitchens, including stages at St John and Moro, before working under Margot Henderson at Rochelle Canteen. He went on to hold the head chef role at Brunswick House, and worked closely with Isaac McHale and James Lowe on the early Young Turks pop-ups in East London.

In 2012, Nicholas opened Salon in Brixton Market, followed by Levan and Larry’s in Peckham, restaurants known for their produce-led cooking and relaxed, thoughtful approach to hospitality. In 2021, after starting a family, he relocated to Somerset to open Holm.

In 2025, Nicholas represented the South West on BBC’s Great British Menu, bringing his ingredient-led cooking and deep connection to Somerset produce to a national audience.

Now approaching its fifth year, Holm has quietly become a destination restaurant with rooms, deeply rooted in its Somerset surroundings. The menus are shaped by seasonality, local growers and producers, and a wider sense of place, with Nicholas using food to tell stories connected to the landscape and history of the South West, from figures such as Mary Anning to Jean Eavis. Alongside the restaurant, Holm also offers a small collection of bedrooms and experience-led stays, cementing its place as one of the region’s most distinctive food destinations.

Rose Cant

Mum on Muddy Lane

Rose Cant, known as Mum on Muddy Lane to her 40k plus Instagram followers, is well known for her down-to-earth approach to family friendly cooking, speedy lunches and home-hacks. 

Rose is a self-taught cook, a professional actress and voiceover artist. Her three great passions are performing, cooking, and being a mother to her two young children, Merlin and Wilder.

“Mum on Muddy Lane” is her social media handle, which quickly became famous for a poached egg hack that Rose jokily posted one day, that rapidly reached over 67 million views in a few weeks. One of the most viral videos of 2023.”

All that aside Rose adds…

“Once my children started school, I decided it was time to put my talents and passions into something useful, by cooking easy meals and showing others how to do it without breaking the bank, whilst hopefully making them laugh too.”

She started filming herself cooking, then presenting the films with comical voiceovers and “relatable-anyone can cook guides”. Rose has now successfully worked as an influencer for food brands the country over and has plans to write a cookbook based on her busy Cornish, family lifestyle.

Nick Evans

Rick Stein’s Cookery School

Nick is Head Chef Lecturer at Rick Stein’s Cookery School and what he doesn’t know about seafood isn’t worth knowing. Nick grew up in East Sussex with his family and from a young age worked the land around their home, growing everything from potatoes to a small vineyard with his dad.

As part of his hospitality degree at Oxford Brookes, Nick worked across our restaurants in Padstow and learnt under Stephane Delourme at The Seafood Restaurant. After completing his degree, Nick returned to Steins working in their Padstow Kitchen, at The Seafood Restaurant, working his way up to senior sous chef, and then working as Head Chef at St Petroc’s Bistro.

In summer 2016, Nick took over the role of Head Chef Lecturer at their cookery school in Padstow – a position he was born to do. There he leads a small team who deliver memorable cookery experiences for guests, who leave having learned trade secrets from the restaurants and how to cook some of Rick’s classic dishes.
