Tim Spedding ~ Coombeshead Farm

Tim Spedding started his career in Cornwall after a summer holiday turned into four years of work and study in the south west. During this time Tim was fortunate enough to work for Mick Smith at The Porthminster Beach Café in just his second season at the helm.

Having graduated from Cornwall College the same year, Tim left Cornwall to pursue a dream of working and travelling around South East Asia & Australia including a stint at Vans in Perth working with former Porthminster sous chef Ben Day & at Quay in Sydney.

Tim returned from his travels to work at the world renowned Ledbury in London. After working at The Ledbury for several years Tim left to open the celebrated Clove Club in Shoreditch as Head Chef in 2013. In 2017, following a much talked about residency at Franco in Clapton, Tim and his partner Louise Roedkjaer moved to Cornwall to work at Coombeshead Farm. Whilst in London they developed close relationships with many suppliers in the area, and after 10 years working in London the return to Cornwall felt a natural next step.

Set amongst 66 acres of meadows, woodland and oak-lined streams, Coombeshead is a farm, five bed guesthouse, restaurant and bakery set up by chefs Tom Adams and April Bloomfield in the heart of Cornwall’s countryside. Inspired by years working with farmers, butchers, growers and producers from the surrounding area, Tom and April established Coombeshead Farm to narrow the gap between producer and consumer, and in doing so, showcase what can be achieved when farmer, grower and cook work side by side.

The farm serves an ever changing set menu utilising what is at its best from the farm and surrounding growers, fishermen and farmers.
