South African Hylton Espey, Chef owner of Culture in Falmouth. After achieving and retaining three AA rosettes since 2018, Hylton opened Culture in July last year. Culture is a farm to table restaurant showcasing the best hyper local produce served as a seven course Journey menu for dinner and a five course menu for lunch. The menus are told as a story of where all the ingredients come from and who grows them.
The intimate twenty cover restaurant overlooks the open kitchen where Hylton combines modern techniques, ancient traditions and open fire cookery on his custom braai/bbq. Wine enthusiasts love the glass wine cellar where Hylton and his wife, Petronella, showcase some of their personal favourites from old and new world producers.
